Raw Chocolate – Oh, So Magical!

It all started when I moved to Portland, over two years ago….Cacao, Chocolate kept whispering to me. Mind you, I am very sensative to caffine and if I were to eat chocolate after 3 pm, I would be awake for hours. Sadly, I seldom ate it. Then one of my friends brought me along to a raw cacao making class. This was a really fun and informative class. I ate so much raw cacao, I felt energized without feeling jittery. How could this be? There is actually little caffeine in raw chocolate.

These days, I make my own chocolate at home and play with essential oils, liqueurs, salts, fruit juices and intention. My clients keep asking me if I have seen the movie “Waterford Chocolate” but have not seen it yet. So for now, I will just have my own fun making yummy, dark, rich, smooth, love filled chocolate in my kitchen.

If you are lucky enough to be a client, you just may have a chance to experience how decadent raw chocolate can be. So now you are probably wondering how to make your own. Well, I am not the best person to follow recipes and typically do not use them, I just wing it. An alchemist of sorts I suppose. Here is the base that I do use:

Raw Organic Cacao Butter, Raw Organic Cacao Powder (bulk section), Raw Organic Agave (bulk section),

All of these products can be found at People’s Co-op.

Again, some people really get scientific when making their chocolate and use fancy double boilers, thermometers and stuff. Not me!!! I just pull out my pyrex bowls, fill the big bowl with HOT tap water, place a smaller bowl in the hot water. Chip off some cacao butter and let melt. Whisk in cacao powder until a nice consistancy, not to thick. Pour in some agave to your liking and eat. Then start having some alchemy fun and play with elixirs, juices, herbs, and spices…let your emotionation (emotion and imagination) go wild!!!

If you are a chocolate geek, may I suggest getting “Naked Chocolate” by David Wolfe and Shazzie. They will take you on cacao journey so deep, it will make your head spin.
